Behind the scenes: Miss Polly’s Kitchen shares her creamy parsley pesto recipe with Città

Miss Polly’s Kitchen is an Instagram favourite for inspiring recipes to recreate at home. The popular page is the creation of Polly Markus, a dedicated self-taught cook from Auckland, who rose to fame during 2020’s covid lockdown. 

Polly prides herself on creating delicious, uncomplicated, and modern dishes that are a joy to cook and eat. Her recipes are brimming with fresh ingredients, resulting in light, colourful, and beautifully enticing dishes.

Recently, we had the pleasure of hosting Polly for a cooking demonstration at our Grey Lynn flagship store. During the event, Polly showcased three easy-to-make recipes from her upcoming second cookbook, Seriously Delicious.

True to Polly’s signature style of fresh flavours, we were treated to a winter salad, herby brown butter, and the crowd favourite, creamy parsley pesto. To serve, the dishes were plated with ceramics and serveware from our kitchen and dining collection.

Creamy Parsley Pesto From Miss Polly’s Kitchen

This goes beautifully spread onto some toasted sourdough or on a platter with some artisan crackers. You can also use it to stir through some freshly cooked pasta, add a good splash of pasta water to loosen it all up. 

 

Ingredients

- 1 cup parsley
- 1/2 cup grated parmesan
- 1/4 cup lemon juice
- 1/2 cup ricotta
- 2 garlic cloves
- 1 teaspoon sugar
- 1/3 cup extra virgin olive oil

 

Method

Place the above ingredients into a blender and whizz until smooth. Season with salt and pepper to taste.
